This page talks about growing doomsday cucumber seeds. It tells how many one would need to survive on a 2000 a day calorie diet, Keep in mind that a cucumber is mostly water so even if you cannot grow enough to survive on you can grow them to store water.
Slicing cucumbers produce the largest fruits with the thickest skins, which gives them longer shelf life and makes them the best choice for shipping. Harvested at 7 to 8 inches in length, they have an average number of spines and bumps distributed over the dark-green skin of the fruit.
You may be wondering to yourself, "In a survival situation, how many cucumbers would one need?"
Well, based on a 2,000 calorie diet and the fact that one cucumber has about 16 calories in it, one would need to eat 125 cucumber per day.
That is, if this is all they had to eat. Hopefully it is not.
But the information we are going to provide is based on one person, per day, eating only cucumbers.
How many to grow?
You have to first decide if you want to grow pickling or slicing cucumbers.
Pickled cucumbers can be stored for several years once pickled. Slicing cucumbers need to be eaten within a few days.
So the logical choice is to grow pickling cucumbers so you can store them. Of course you have to be able to pickle them which is a different page altogether.
But you would want to slice them up since you could get more in a jar with slices than canning them whole.
One cup of cucumbers is about 16 calories.
One would need to eat about 125 cucumbers per day. This is a lot of cucumber eating.
This is about 46,000 cucumbers per year. It probably is not going to be possible to raise this many for one person.
You
would need about 2,300 plants per year for eating and about 10 plants
for seed production. Let's say 2,500 plants would be needed.

Growing doomsday cucumber seeds actual numbers will depend on the type of cucumber you are growing and the growing conditions in your area.
Make sure you are using open pollinated types of cucumbers.
One plant requires about 144 square inches of space to grow. In a 4 x 8 foot raised bed, you can plant about 32 plants. Plants can be grown on the ground or on a trellis. You would need about 78 raised beds just to grow cucumbers.
It would take a lot of cucumbers to survive.
As long as the temperatures do not fall below 55 degrees Fahrenheit, cucumbers will produce.
There are no off colored cucumbers to try to fool scavengers. There is one called the White Wonder. Scavengers may think there is a problem with it.
You would need to grow enough to plan on some being taken. Grow in several locations. Conceal with other plants like edible flowers.
Most, probably all, scavengers would have no idea that there are edible flowers and herbs. Of course they would not provide the caloric value that vegetables and fruits would provide.
Since they have a short shelf life, you would need to plant a few every couple of weeks so that you are harvesting every day. Cucumbers are made up of 95% water. They would be great for hydrating your body, not much on nutrition.
Cucumbers are part of the Cucurbitaceae family also known as gourds. Most of the plants are vine growing plants. Cucumbers can be grown on some sort of trellis.
Cucumbers are green and there are some white ones. There are slicing and pickling which are called this because of their size. They are great whole or sliced. They are usually pickled with the skins on. Slicing cucumbers can be eaten with the skin on or peeled. I like to peel mine.
One thing to keep in mind when gardening, as Bob Webster, who is the local garden guru in this area of Texas likes to say, "Gardening is a lot like gambling only the odds are worse." If you approach it like this, then when things do not go as as planned, you will not get frustrated. Just dig it up and try again.
Plant according to instructions. Most seeds are planted at a depth of 1/4 inch to 1/2 inch. This needs to be measured because 1/4 inch is less than you think. When I first got into gardening, I planted green beans. The pack said to plant them at one inch. I thought that if one inch is good two is even better.
The rule of thumb is plant the seeds at twice the depth of the seed size.
